Simple Dish: Roasted Veg

Here's another recipe I consider a winner! How much of each vegetable you use depends on how much you're making overall (for 1 person, 4 people, 1 day, 3 days, etc). Cleanse Phase 1 and kitchen newbie approved!

I slice a red onion, roughly chop some carrots, a few zucchini (not too thin on these or they get soggy), widely slice some red and orange bell peppers and quarter some Roma tomatoes (the oval shaped ones). Then I take some fresh rosemary and thyme, pull the leaves off the stalks and finely chop.

I put all the veg except for the tomatoes into a roasting pan (pre-heat oven to 375), pour a thin stream of olive oil all over, sprinkle a couple pinches of salt and then sprinkle the fresh chopped herbs all over it. I put the whole thing in the oven and let it all cook. About 15 minutes before I think it's done, I put the tomatoes in and stir it all up to mix the juices and herbs around. You'll know it's ready when all the vegetables are soft, but not mushy. The carrots are usually the last to go so if you test a carrot and it's done, the whole thing is done.

Meanwhile, I put some brown rice in our rice cooker, which I believe is totally indispensable, by the time the veg is done, our brown rice is done. But since I work at nights, I prepare the vegetables during the day and then cover them. I set the rice maker to have my rice finished as I walk in the door. While I'm changing clothes, I turn the oven back on so the veg heats up again and by the time I'm done, they are reheated, rice is ready and dinner is served. Great for packed lunches, etc. the following day.

What makes this easy, easy dish special is the roasting of the vegetables, which lends a really rich flavor to the food so you feel like you're eating something fulfilling and the fresh herbs. Dried herbs don't compare with a dish like this. Jeff's all time favorite rice is a kind we buy at Nature's Pantry, it's Organic Brown Sweet Rice by Lundberg. They have regular brown rice which is also great, he really likes the Brown Sweet Rice for the texture which has a little more bite and nutty flavor. Easy, no?

PS - I think I ate my weight in banana chips yesterday. Sigh...the good news is the ones without sugar aren't nearly as tasty so when they are the only option during the cleanse, I'm sure I won't be as tantalized by them.

I feel like I am really cashing in on your recipe posts, G. Also, I love the phrase "Cleanse Approved" or "Phase One Approved". Which one do you think would make a better tattoo?

Question about the rice cooker: how do you measure and time the cooker for brown rice? I've tried to work with the instructions but I don't feel they refer to brown rice. Inevitably, I'm disappointed each time I try and just fall back to the sauce pan method (which takes soooooo long).

Hmmm, well my rice cooker has a specific brown rice setting so I just set it to that and then go. I believe brown rice takes a little longer than white rice so if you have some way to adjust the settings maybe you need to set it to cook a little longer? The other thing you might do is get on the rice cookers website and see if they have any advice on there. And lastly, an option might be to donate the one you have and do a little upgrade if you think you'll be cooking brown rice a lot in the future. You can always bring your cooker into the studio with the instructions and I can try to figure it out or bring it home and test it :)
